Cauliflower steak with chimichurri

This recipe transforms simple cauliflower into a visually appealing and savory main dish with the addition of chimichurri, an aromatic herb sauce. The cauliflower steaks are roasted to bring out their natural sweetness and tenderness, perfectly complementing the bold flavors of parsley, oregano, and garlic in the chimichurri. This dish is an excellent choice for anyone seeking a plant-based option that doesn’t compromise on taste or presentation.

Ingredients

  • 2 medium cauliflower, sliced into steaks
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 cup fresh parsley, chopped
  • 2 Tbsp fresh oregano, chopped
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Arrange the cauliflower steaks on a baking sheet and evenly coat with half the olive oil. Season lightly with salt.
  3. Roast the cauliflower for about 20 minutes, turning halfway through, until golden brown and tender.
  4. While the cauliflower roasts, prepare the chimichurri sauce. In a bowl, combine red wine vinegar, remaining olive oil, parsley, oregano, garlic, and red pepper flakes. Stir well to mix.
  5. Drizzle the prepared chimichurri over the roasted cauliflower steaks just before serving.
