Ingredients
- 2 cans chickpeas, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch piece ginger, grated
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 Tbsp olive oil
- 2 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- salt and pepper to taste
- 1 cup spinach
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper. Cook for another 2 minutes.
- Add the diced tomatoes with their juices and cook for 5 minutes.
- Pour in the vegetable broth and chickpeas. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the spinach and cook until wilted, about 2 minutes.
