Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch piece ginger, grated
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 Tbsp olive oil
  • 2 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • salt and pepper to taste
  • 1 cup spinach
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the garlic, ginger, cumin, coriander, turmeric, and cayenne pepper. Cook for another 2 minutes.
  4. Add the diced tomatoes with their juices and cook for 5 minutes.
  5. Pour in the vegetable broth and chickpeas. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Stir in the spinach and cook until wilted, about 2 minutes.
