Ingredients

  • 1 packet active dry yeast
  • 1 1/4 cups warm water
  • 1/4 cup honey
  • 1/4 cup molasses
  • 1/4 cup vegetable oil
  • 1/2 cup rye flour
  • 1 Tbsp salt
  • 2 1/2 cups bread flour
  • 1 1/2 Tbsp ground cinnamon
  • 1/2 cup brown sugar

Instructions

  1. In a large bowl, dissolve the active dry yeast in warm water at 110°F (45°C). Add honey, molasses, vegetable oil, rye flour, salt, and 1 cup of bread flour. Beat the mixture until smooth.
  2. Gradually stir in the remaining bread flour to form a soft dough. Transfer the dough to a floured surface and knead it until smooth and elastic, about 6 to 8 minutes.
  3. Place the kneaded dough in a greased bowl, turning once to grease the top. Cover the bowl with a cloth and let it rise in a warm place until doubled in size, for about 1 hour.
  4. Once risen, punch the dough down and turn it onto a lightly floured surface. Roll the dough into a rectangle measuring 15×10 inches.
  5. In a separate bowl, combine the ground cinnamon and brown sugar. Sprinkle this mixture evenly over the rolled-out dough, leaving a 1/2-inch border free of filling.
  6. Starting with a long side, roll the dough up jelly-roll style and pinch the seam to seal. Place the roll seam side down on a greased baking sheet.
  7. Cover the roll and let it rise again in a warm place until doubled, for about 30 minutes.
  8. Preheat the oven to 375°F (190°C). Once risen, bake the bread in the oven for 25 to 30 minutes until golden brown. Transfer the baked bread to a wire rack to cool before slicing.
