Ingredients

  • 1 lb beef jerky, thinly sliced

  • 1 Tbsp vegetable oil

  • 1 cup bell peppers, sliced
  • 2 cloves garlic, minced
  • 1/4 cup beef broth
  • 1 Tbsp vinegar
  • 1 Tbsp soy sauce
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 2 cups cooked rice
  • 2 Tbsp chopped cilantro, for garnish

Instructions

  1. Marinate the beef jerky in soy sauce for 30 minutes in a bowl.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add marinated beef jerky and cook until browned, about 5 minutes.
  4. Add onion, bell peppers, and garlic; sauté until vegetables are tender.
  5. Pour in beef broth, vinegar, soy sauce, cumin, paprika, and black pepper. Cook for another 5 minutes.
  6. Serve stir-fry over cooked rice and garnish with chopped cilantro.
