  • 1/2 cup butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (180°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, turmeric, ginger, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the sugar, oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
