Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 to 20 min until water is absorbed.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for 2 to 3 min until translucent.
  3. Add the tomatoes, ground cumin, and paprika to the skillet. Cook for about 5 min, stirring occasionally.
  4. Add the assorted seafood to the skillet. Cook until the seafood is fully cooked, approximately 5 to 7 min.
  5. Stir in the cooked quinoa and chopped cilantro. Adjust seasoning with additional salt and pepper if needed.
