Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Blanch the cauliflower in a large pot of boiling salted water for 3 minutes. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 2 minutes.
  4. Gradually whisk in the milk until smooth. Cook, stirring constantly, until the sauce thickens, about 5 minutes.
  5. Remove from heat and stir in 1 cup of gruyere, parmesan, nutmeg, and a pinch of salt and pepper.
  6. In a baking dish, layer the blanched cauliflower and pour the cheese sauce over the top. Sprinkle with the remaining gruyere cheese.
  7. Bake for 30 minutes, or until the top is golden and bubbly. Allow it to rest for 5 minutes before serving.
