Ingredients

  • 1 whole spaghetti squash
  • 4 Tbsp butter, softened
  • 2 Tbsp fresh herbs, chopped

Instructions

  1. Preheat grill to medium-high heat, 375°F (190°C).
  2. Cut spaghetti squash in half lengthwise, scoop out seeds.
  3. Brush cut sides of squash with olive oil, season with salt and pepper.
  4. Place squash cut-side down on grill, cook 25-30 min, until tender.
  5. In small bowl, combine softened butter, chopped herbs, season lightly.
  6. Remove squash from grill, flip over, fill center with herbed butter.
  7. Cover with foil, let butter melt for 3-4 min.
  8. Slice squash into strands, serve with remaining herbed butter.
