Instructions
- Preheat the oven to 400°F (200°C).
- In a medium saucepan, combine quinoa, farro, and 4 cups of water. Bring to a boil, reduce heat, and simmer for 15-20 minutes until grains are tender. Drain any excess water.
- On a baking sheet, toss butternut squash with 1 tbsp olive oil, smoked paprika, and cumin. Roast for 20 minutes until tender.
- Add the red onion, bell pepper, zucchini, and cherry tomatoes to the baking sheet with the squash. Drizzle with the remaining olive oil and balsamic vinegar. Roast for an additional 20 minutes, stirring halfway through.
- In a small bowl, whisk together maple syrup and balsamic vinegar. Season with salt and pepper.
- Divide the cooked grains among bowls. Top with roasted vegetables, walnuts, and parsley. Drizzle with the maple-balsamic dressing.
