Ingredients

Instructions

  1. Rinse the red and green lentils under cold water and set aside.
  2. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
  3. Add the diced onion and cook for 5-7 minutes until translucent.
  4. Stir in the minced garlic, grated ginger, and berbere spice blend, cooking for about 1 minute until fragrant.
  5. Add the rinsed lentils and vegetable broth to the pot, stirring to combine.
