Ingredients

  • 1 whole small onion, chopped
  • 2 medium carrots, sliced
  • 1 cup green beans, trimmed
  • 1/2 cup potatoes, diced
  • 1 cup cabbage, shredded
  • 1 cup tomatoes, chopped
  • 1 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 2 Tbsp olive oil

Instructions

  1. Heat 2 Tbsp olive oil in a large skillet over medium heat until shimmering.
  2. Add the chopped onions and cook, stirring occasionally, until they become translucent, about 3 to 4 minutes.
  3. Stir in the turmeric powder, cumin powder, paprika, and cayenne pepper, allowing the spices to bloom for 1 minute.
  4. Add the sliced carrots, trimmed green beans, and diced potatoes to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften.
  5. Mix in the shredded cabbage and chopped tomatoes. Reduce the heat to low, cover the skillet, and let it simmer for 15 to 20 minutes, stirring occasionally, until all vegetables are tender.
  6. Adjust seasoning with salt and black pepper as needed.
  7. Serve the mixed vegetable platter warm, paired with traditional Ethiopian injera.
