Ingredients

  • 1 tbsp soy sauce
  • 1 tbsp gochugaru (Korean chili flakes)
  • 1 tbsp sesame oil
  • 1 tbsp green onion, chopped

Instructions

  1. In a pot, heat the vegetable broth over medium heat.
  2. Add the mushrooms, zucchini, and carrots to the broth and simmer for 10 minutes.
  3. Add the tofu, garlic, soy sauce, and gochugaru to the pot and cook for another 10 minutes.
  4. Stir in the sesame oil and green onions, then remove from heat.
  5. Serve the stew hot.
