Ingredients

  • 1 whole duck liver
  • 1 whole chicken breast

  • 1/4 cup brandy
  • 1/4 cup heavy cream

  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup pistachios, shelled
  • 1 package puff pastry

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a food processor, combine the duck liver, chicken breast, onion, garlic, brandy, and heavy cream. Process until smooth.
  3. Add the ground cloves, allspice, nutmeg, salt, and pepper to the mixture. Pulse to combine.
  4. Fold in the pistachios until they are evenly distributed throughout the pâté mixture.
  5. Roll out the puff pastry into a large rectangle on a lightly floured surface. Place the pâté mixture in the center and fold the pastry over to encase the filling, sealing the edges well.
  6. Brush the pastry with an egg wash and score the top lightly for ventilation.
  7. Place the wrapped pâté on a baking sheet and bake for 1 hour or until the pastry is golden brown and cooked through.
