Ingredients
- 1 whole chicken, about 4 pounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 whole lemon, sliced
- 4 cloves garlic, minced
- 2 teaspoons fresh thyme leaves
- 1 teaspoon fresh rosemary, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub olive oil over the entire chicken, then season with salt and black pepper.
- Stuff the chicken cavity with half of the lemon slices, half of the minced garlic, and a sprinkle of thyme and rosemary.
- Distribute the remaining lemon slices, garlic, thyme, and rosemary over the top of the chicken.
- Tie the chicken legs together with kitchen string, and tuck the wing tips under the body.
- Roast the chicken in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Rest the chicken for 10 minutes before carving. Serve with pan juices.
