Ingredients

  • 1 whole chicken, about 4 pounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lemon, sliced
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub olive oil over the entire chicken, then season with salt and black pepper.
  4. Stuff the chicken cavity with half of the lemon slices, half of the minced garlic, and a sprinkle of thyme and rosemary.
  5. Distribute the remaining lemon slices, garlic, thyme, and rosemary over the top of the chicken.
  6. Tie the chicken legs together with kitchen string, and tuck the wing tips under the body.
  7. Roast the chicken in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Rest the chicken for 10 minutes before carving. Serve with pan juices.
