Ingredients

  • 2 medium sweet potatoes, diced
  • 1 bunch kale, chopped
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt
  • pepper
  • 2 Tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, onion powder, salt, and pepper until well coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 20 to 25 minutes, or until tender and slightly crispy, stirring halfway through.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat.
  5. Add the chopped kale and sauté for about 5 minutes until wilted, stirring occasionally.
  6. Once the sweet potatoes are done, add them to the skillet with the kale and mix well.
  7. Taste and season with additional salt and pepper if needed.
