Ingredients
- 2 medium eggplants
- 1/4 cup tahini
- 2 cloves garlic, minced

Instructions
- Preheat the oven to 400°F (200°C).
- Pierce the eggplants with a fork and place them on a baking sheet. Roast for 40-45 minutes until they are soft and the skin is charred.
- Remove eggplants from the oven and let them cool. Peel off the skin and chop the flesh.
- In a food processor, combine the chopped eggplant, tahini, garlic, lemon juice, and 2 tablespoons of olive oil. Process until smooth.
- Taste and adjust the seasoning with salt and pepper as needed.
- Transfer the Baba Ghanoush to a serving bowl. Drizzle with a little extra olive oil and sprinkle with chopped parsley.
- Serve with pita bread or fresh vegetables.
