Ingredients

  • 2 cups mixed dried fruits
  • 1 cup hot black tea
  • 1 cup brown sugar
  • 1 tsp mixed spice
  • 1 tsp cinnamon
  • 1 whole egg, beaten
  • 2 cups flour
  • 1 tsp baking powder

Instructions

  1. In a large bowl, combine the mixed dried fruits and hot black tea. Let it soak overnight, approximately 12 hours.
  2. Preheat the oven to 350°F (175°C). Grease a loaf pan with butter or oil.
  3. Stir the brown sugar, mixed spice, cinnamon, and beaten egg into the soaked fruit mixture until well combined.
  4. Sift the flour and baking powder into the bowl. Gently fold the mixture until just combined, taking care not to overmix.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for about 1 hour, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Allow the barmbrack to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Once cooled, slice the barmbrack and serve with butter.
