Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and brown them in batches, ensuring they are evenly seared.
  2. Remove the beef and set aside. In the same pot, add the chopped onion and minced garlic, cooking until onion is translucent.
  3. Pour in the Guinness beer, scraping up any browned bits from the bottom of the pot.
  4. Return the beef to the pot and add beef broth, tomato paste, carrots, and potatoes. Stir in thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2.5 hours, or until the meat is tender.
  6. For the soda bread, preheat your oven to 425°F (220°C).
  7. In a mixing bowl, combine flour, baking soda, sugar, and salt. Gradually add the buttermilk, mixing until a dough forms.
  8. Turn the dough out onto a lightly floured surface and knead briefly. Shape into a round loaf and place on a baking sheet.
