  • 2 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/4 cup all-purpose flour
  • 2 Tbsp olive oil

Instructions

  1. Season beef cubes with salt, pepper, and coat with flour evenly in a large bowl.
  2. In a Dutch oven or large pot, heat olive oil over medium-high heat. Brown the beef in batches, then set aside.
  3. Add onion, carrots, and garlic to the pot. Cook for about 5 minutes until softened.
  4. Stir in tomato paste, thyme, and rosemary, cooking for another minute.
  5. Pour in Guinness, scraping up any browned bits from the bottom of the pot.
  6. Return the beef to the pot, then add beef broth and Worcestershire sauce. Bring to a simmer.
  7. Cover and cook on low heat for 1.5 to 2 hours until the beef is tender.
  8. Add potatoes and continue cooking for another 30 minutes, until vegetables are soft.
  9. Adjust seasoning with salt and pepper as needed before serving.
