Ingredients

  • 1 lb gruyere cheese, shredded
  • 1 lb emmental cheese, shredded
  • 2 cloves garlic, halved
  • 1 cup dry white wine
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 pinch nutmeg, grated
  • 1 loaf french bread, cubed

Instructions

  1. Rub the inside of a fondue pot with the garlic halves. Discard the garlic after rubbing.
  2. Add the white wine to the pot and heat until simmering, but not boiling.
  3. Gradually add the shredded cheeses to the simmering wine, stirring continuously until the cheeses are completely melted.
  4. In a separate small bowl, whisk the cornstarch with lemon juice until smooth, then stir this mixture into the melted cheese.
  5. Add the nutmeg, stirring well, and continue to cook for a few more minutes until the fondue thickens slightly.
  6. Transfer the fondue pot to a burner set on low heat to keep the fondue warm and creamy throughout serving.
  7. Serve immediately with cubed French bread and your choice of vegetables and meats for dipping.
