Ingredients

  • 2 cups potatoes, diced

Instructions

  1. Heat 2 Tbsp of vegetable oil in a large pot over medium-high heat.
  2. Add 2 cups of chopped onions and 3 cloves of minced garlic; sauté for 2 to 3 minutes until translucent.
  3. Add 2 lbs of cubed beef stew meat; cook until browned on all sides, approximately 5 minutes.
  4. Stir in 1 tsp of cumin powder and 1 cup of chopped cilantro leaves.
  5. Pour in 2 cups of beef broth and bring the mixture to a simmer.
  6. Cover the pot and cook for 45 minutes, stirring occasionally to prevent sticking.
  7. Add 2 cups of diced potatoes; continue to simmer until the potatoes are tender, about 15 minutes.
  8. Taste and adjust seasoning with salt and black pepper if necessary before serving.
