  • 1 cup lemon juice

  • 2 large avocados, diced
  • 1 jalapeno, seeded and minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp olive oil

Instructions

  1. In a large bowl, combine the diced fish, lime juice, lemon juice, and orange juice. Cover and refrigerate for 30 minutes to allow the citrus to ‘cook’ the fish.
  2. After 30 minutes, remove the bowl from the refrigerator. Add the cherry tomatoes, red onion, cilantro, avocado, jalapeno, salt, and black pepper to the marinated fish. Mix gently to combine, ensuring the delicate fish remains intact.
  3. Drizzle olive oil over the ceviche mixture. Stir gently to coat all the ingredients evenly.
  4. Serve the ceviche chilled, either with tortilla chips or on a bed of lettuce.
