  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken thighs dry with a paper towel and season with salt and pepper on all sides.
  3. In a large oven-safe skillet, heat olive oil over medium heat until shimmering.
  4. Place the chicken thighs in the skillet, skin side down, and cook until the skin is golden brown, about 5 minutes. Flip and brown the other side for an additional 5 minutes.
  5. Remove the chicken from the skillet and set aside on a plate.
  6. To the same skillet, add the chopped onion and cook until softened, about 5 minutes, scraping up any browned bits from the bottom of the skillet.
  7. Stir in the minced garlic, curry powder, ground ginger, and cayenne pepper, cooking until fragrant, about 1 minute.
  8. Mix in the chopped apricots and chicken broth, stirring well to combine.
  9. Return the chicken thighs to the skillet, arranging them skin side up in the sauce.
  10. Transfer the skillet to the preheated oven and bake for 30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  11. Remove from the oven and sprinkle fresh cilantro over the dish before serving.
