Savor the combination of tender country ham nestled in buttery biscuits, enhanced by a touch of tangy Dijon mustard.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 6 tablespoons unsalted butter, chilled and cubed
  • 3/4 cup buttermilk
  • 8 oz country ham, thinly sliced
  • 1/4 cup Dijon mustard

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Cut in the chilled butter with a pastry cutter until the mixture resembles coarse crumbs.
  4. Stir in the buttermilk until just combined, forming a soft dough.
  5. Turn the dough onto a floured surface and knead gently 2-3 times.
  6. Roll out the dough to 1/2-inch thickness and cut into biscuits using a 2-inch round cutter.
  7. Place biscuits on a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes, or until the biscuits are golden brown.
  9. Allow biscuits to cool slightly before slicing in half.
  10. Fill each biscuit with thin slices of country ham.
  11. Spread a small amount of Dijon mustard on the inside of the biscuit, if desired.
  12. Serve warm and enjoy.
