  • 2 15 oz cans chickpeas, drained and rinsed

  • 2 Tbsp lemon juice
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika

  1. Preheat oven to 350°F (180°C).
  2. In a food processor, pulse flaxseeds, salt, and 1/2 cup of water until a dough forms.
  3. Roll out the dough between two sheets of parchment paper until thin.
  4. Cut into cracker shapes and place on a baking sheet. Bake for 15-20 minutes until crispy, checking halfway through to ensure even baking.
  5. For the hummus, cut the top off the head of garlic, drizzle with a small amount of olive oil, and wrap in foil. Roast in the oven for about 15 minutes until soft.
  6. Squeeze the roasted garlic cloves into a food processor.
  7. Add the chickpeas, tahini, olive oil, lemon juice, cumin, and paprika to the food processor. Blend until smooth and creamy, adjusting seasoning if necessary.
  8. Serve the flaxseed crackers with the roasted garlic hummus.
