Ingredients

  • 2 cans fava beans, drained and rinsed
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tsp cumin
  • salt and pepper
  • 1/4 cup parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the minced garlic and cook until fragrant, about 1 minute.
  3. Stir in the cumin and cook for another 30 seconds.
  4. Add the fava beans and lemon juice to the pan. Season with salt and pepper to taste.
  5. Simmer the mixture over low heat for 45-60 minutes, stirring occasionally.
  6. Mash some of the beans with the back of a spoon to thicken the mixture as desired.
  7. Serve the Ful Medames hot, garnished with chopped parsley.
