  • 1/2 cup grated parmesan cheese

  1. Heat the olive oil in a large pan over medium heat and sauté the onion until translucent, about 2 to 3 minutes.
  2. Add the arborio rice to the pan and stir continuously for about 2 minutes until the rice is lightly toasted.
  3. Pour in the white wine, stirring constantly, and cook until it has completely evaporated.
  4. Begin adding the vegetable broth to the rice, one ladle at a time, stirring continuously until each addition is absorbed before adding the next. This will take about 15 to 20 minutes.
  5. Once the rice is creamy and al dente, stir in the green peas, chopped mint, lemon zest, and grated parmesan cheese. Mix until well combined.
  6. Season the risotto with salt, pepper, and freshly squeezed lemon juice to taste.
  7. Remove from heat and let the risotto sit for a minute before serving. Garnish with additional mint leaves and lemon zest if desired.
