Ingredients

  • 4 cups fresh nettles, washed and chopped

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté for about 3 to 4 minutes until softened.
  2. Add the diced potatoes and vegetable broth to the pot. Increase the heat to bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes until the potatoes are tender.
  3. Stir in the chopped nettles and continue cooking for about 5 minutes, allowing the nettles to wilt and soften.
  4. Use an immersion blender to puree the soup until it reaches a smooth consistency. Taste and adjust seasoning with salt and pepper if desired.
  5. Serve the soup hot, garnished with a light drizzle of olive oil and a few fresh nettle leaves, if available.
