Idli is a cherished South Indian dish recognized for its light and fluffy nature. Created from a fermented mix of rice and lentils, these savory steamed cakes are a fundamental part of South Indian cuisine. The process involves soaking rice and lentils, grinding them into a smooth batter, fermenting overnight, and then steaming the batter in specialized molds. Idlis pair well with coconut chutney and sambar, a flavorful lentil soup, making them a delightful choice for breakfast or as a snack.
Ingredients
- 1 cup idli rice, rinsed and soaked
- 1/2 cup urad dal, rinsed and soaked
- 1/2 tsp salt
- as needed water
Instructions
- In a blender, grind the soaked idli rice and urad dal with salt, adding water gradually to create a smooth batter.
- Transfer the batter to a bowl, cover it, and let it ferment in a warm place overnight or for at least 8 hours until it doubles in volume.
- Grease the idli molds lightly with oil and pour the fermented batter into each mold, filling them about three-quarters full.
- Place the molds in a steamer, cover, and steam the idlis for about 10 to 12 minutes until a toothpick inserted into the center comes out clean.
- Carefully remove the idlis from the molds using a spoon and serve them hot with coconut chutney and sambar.
