This naan is leavened with yeast and yogurt, then cooked in a screaming-hot skillet to mimic a tandoor's blistered char. Brushed with melted butter and finished with garlic, it pairs well with curries, dals, or grilled meats, and it also works as a wrap for leftovers.

Ingredients

  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 2 teaspoons instant yeast
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 3/4 cup warm water
  • 1/2 cup plain whole-milk yogurt
  • 2 tablespoons neutral oil
  • 1 large egg, beaten
  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped

Method

  1. In a large bowl, whisk together the flour, instant yeast, sugar, baking powder, and salt.

  2. Add the warm water, yogurt, oil, and beaten egg. Mix with a wooden spoon or your hands until a rough dough forms.

  3. Turn the dough out onto a lightly floured surface and knead until smooth and elastic.

  4. Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp towel, and let rise in a warm spot until doubled in size.

  5. Punch down the dough and divide into 8 equal pieces. Roll each into a ball, cover, and let rest.

  6. On a floured surface, roll or stretch each ball into an oval about 1/4 inch thick.

  7. Heat a 9-inch cast iron skillet over medium-high heat until very hot. Place a dough oval in the dry skillet and cook until bubbles form and the bottom is spotted brown.

  8. Flip the naan and cook the second side until puffed and charred in spots, pressing lightly with a spatula.

  9. Transfer the cooked naan to a plate and repeat with the remaining dough, stacking cooked pieces under a clean towel to keep warm.

  10. Stir the minced garlic and chopped cilantro into the melted butter, then brush generously over each warm naan before serving.
