Malai Kofta

Ingredients

  • 1 cup paneer, crumbled

  • 1 tsp kashmiri red chili powder
  • 1 tsp turmeric powder
  • 1 tbsp cornflour
  • salt
  • oil for frying
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 inch ginger, grated
  • 1 cup tomato puree
  • 1/2 cup heavy cream
  • 1 tsp sugar
  • 1/2 tsp kasuri methi
  • water for the gravy

Instructions

  1. Combine the crumbled paneer, mashed potatoes, cashew paste, garam masala, red chili powder, turmeric powder, cornflour, and salt in a large mixing bowl. Mix well to form a smooth dough.
  2. Divide the dough into small balls and flatten them slightly to form koftas.
  3. Heat oil in a deep pan. Fry the koftas until golden brown, then drain on a paper towel and set aside.
  4. In a separate pan, melt the butter and sauté the garlic and ginger until fragrant.
  5. Add the tomato puree and cook until the oil separates. Stir in the cream, sugar, and kasuri methi.
  6. Add water to achieve the desired consistency of the gravy and bring to a simmer.
  7. Gently place the koftas in the gravy and allow them to soak up the flavors for a few minutes.
  8. Serve with rice or naan, garnished with fresh cream and chopped coriander leaves.
