Ingredients

  • 1 cup rice
  • 1/2 cup split yellow lentils, moong dal
  • 4 cups water
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp black peppercorns
  • 1 tsp ginger, minced
  • 10 whole curry leaves
  • 2 tbsp cashews
  • 1/2 tsp salt

Instructions

  1. Rinse the rice and lentils together under cold water until the water runs clear. Soak them for 30 minutes if time permits.
  2. In a large pot, combine the rice, lentils, and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 to 20 minutes until the mixture is creamy and the rice and lentils are fully cooked.
  3. In a separate pan, heat the ghee over medium heat. Add cumin seeds, black peppercorns, ginger, and curry leaves, and cook for 1 to 2 minutes until the spices are fragrant.
  4. Add cashews to the pan and sauté for another 2 to 3 minutes until they turn golden brown.
  5. Pour the ghee and spice mixture over the cooked rice and lentils. Add the salt and stir everything together until well combined.
  6. Serve the Pongal warm in a white dish.
