Ingredients
- 1 cup red kidney beans, soaked
- 1 cup basmati rice, washed and drained
- 2 Tbsp oil
- 1 tsp cumin seeds
- 1 large onion, finely chopped
- 1 Tbsp ginger-garlic paste
- 2 medium tomatoes, pureed
- 1 tsp turmeric powder
- 1 Tbsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala
- salt
- water
- 2 Tbsp fresh coriander leaves, chopped
Instructions
- Soak red kidney beans overnight to ensure they are soft and ready for cooking.
- Pressure cook the soaked kidney beans with water until they are tender. Set aside.
- Heat oil in a pan over medium heat, add cumin seeds, and wait for them to splutter.
- Add the finely chopped onions and sauté until they turn golden brown, about 5 to 7 minutes.
- Stir in the ginger-garlic paste and cook for another 1 to 2 minutes until the raw smell goes away.
- Mix in the tomato puree, turmeric powder, coriander powder, red chili powder, garam masala, and salt. Cook the mixture until the oil starts to separate, for about 10 minutes.
- Add the cooked kidney beans to the pan and let it simmer on low heat for 15 to 20 minutes, allowing the flavors to meld.
- Meanwhile, in a separate pot, combine basmati rice with water and a pinch of salt, and cook until the rice is fluffy and fully cooked.
- Serve the Rajma hot with the steamed basmati rice, garnished with fresh coriander leaves.
