  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 pint cherry tomatoes
  • 1/2 cup pesto sauce
  • 2 tbsp olive oil

  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, toss the sausage, potatoes, and broccoli with olive oil until evenly coated. Season with salt and pepper to taste.
  3. Roast in the oven for 15 minutes.
  4. Add cherry tomatoes to the pan and continue roasting for another 10 minutes until vegetables are tender and sausage is cooked through.
