  • 4 boneless skinless chicken breasts
  • 2 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced
  • 1/2 cup fresh basil leaves
  • 1 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small saucepan, bring balsamic vinegar to a gentle boil over medium heat. Reduce heat to low and simmer until reduced by half, about 15 minutes. Set aside.
  3. Season chicken breasts with salt and black pepper on both sides.
