Ingredients
- 4 boneless skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- 1/2 cup fresh basil leaves
- 1 cup balsamic vinegar
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a small saucepan, bring balsamic vinegar to a gentle boil over medium heat. Reduce heat to low and simmer until reduced by half, about 15 minutes. Set aside.
- Season chicken breasts with salt and black pepper on both sides.
