Ingredients

  • 2 large sweet potatoes, cut into wedges
  • 2 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt, divided
  • 1/2 tsp black pepper
  • 2 whole avocados, mashed
  • 1/4 cup red onion, finely chopped
  • 1 whole lime, juiced
  • 1/4 cup cilantro, chopped
  • 1 whole jalapeno, seeded and finely chopped

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Toss the sweet potato wedges with olive oil, paprika, garlic powder, half the salt, and black pepper in a large bowl until well coated.
  3. Arrange the wedged potatoes on a baking sheet in a single layer.
  4. Roast in the preheated oven for 25 to 30 minutes, turning the wedges once at the halfway point, until they are crispy and golden.
  5. While the potatoes cook, combine the mashed avocados, chopped red onion, lime juice, chopped cilantro, chopped jalapeno, and the remaining salt in a bowl. Stir until well mixed.
  6. Serve the roasted wedges immediately with the fresh guacamole.
  7. Discard any unused guacamole within two days, stored in an airtight container in the refrigerator.
