Ingredients
- 1 pound beef stew meat, cubed
- 2 tablespoons olive oil
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons garam masala
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 4 cups beef broth
- 1 cup frozen peas
Instructions
- Heat 1 tablespoon of olive oil in a 9-inch skillet over medium-high heat.
- Add the stew meat; brown on all sides for about 6-8 minutes, then remove from skillet.
- In the same skillet, add the remaining olive oil and sauté the onion until translucent, about 5 minutes.
- Add the garlic and garam masala, cooking for another minute until fragrant.
- Stir in the beef, salt, and pepper, then add the carrots and potatoes.
- Pour in the beef broth, scraping up any brown bits from the bottom of the skillet.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
- Add the frozen peas and continue to simmer for another 20 minutes, until the vegetables are tender.
- Adjust seasoning to taste and serve hot.
