Ingredients

  • 1 pound beef stew meat, cubed
  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons garam masala
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 4 cups beef broth
  • 1 cup frozen peas

Instructions

  1. Heat 1 tablespoon of olive oil in a 9-inch skillet over medium-high heat.
  2. Add the stew meat; brown on all sides for about 6-8 minutes, then remove from skillet.
  3. In the same skillet, add the remaining olive oil and sauté the onion until translucent, about 5 minutes.
  4. Add the garlic and garam masala, cooking for another minute until fragrant.
  5. Stir in the beef, salt, and pepper, then add the carrots and potatoes.
  6. Pour in the beef broth, scraping up any brown bits from the bottom of the skillet.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.
  8. Add the frozen peas and continue to simmer for another 20 minutes, until the vegetables are tender.
  9. Adjust seasoning to taste and serve hot.
