Combine the sweet and tangy flavors of strawberries and sour cream in a unique pasta dish with Fusilli.

Ingredients

  • 2 cups fresh strawberries, hulled
  • 1/2 cup sour cream
  • 1 pound Fusilli pasta
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped

Instructions

  1. In a large pot, bring salted water to a boil and cook the Fusilli pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and return the pasta to the pot.
  2. While the pasta is cooking, place the hulled strawberries in a blender or food processor and pulse until smooth, creating a strawberry puree.
  3. Add the olive oil to the cooked pasta and stir to coat evenly.
  4. Mix the sour cream and reserved pasta water into the strawberry puree until well-combined.
  5. Pour the strawberry and sour cream mixture over the pasta, stirring until the pasta is evenly coated.
  6. Season with salt and black pepper to taste.
  7. Garnish with chopped fresh basil before serving.
