  • 2 1/2 cups spelt flour
  • 1 cup sunflower seeds, toasted

  • 1 1/2 cups warm water
  • 2 1/4 tsp active dry yeast

  1. In a large bowl, combine spelt flour, sunflower seeds, and salt.
  2. In a separate bowl, mix warm water (110°F / 45°C), yeast, and honey. Let it sit for 5 minutes until it becomes foamy.
  3. Add the yeast mixture to the dry ingredients. Knead until a smooth dough forms, about 10 minutes.
  4. Cover the dough with a damp cloth and let it rise in a warm place for 1 hour, until it doubles in size.
  5. Punch down the dough and shape it into a loaf. Place the loaf in a greased loaf pan.
  6. Cover the loaf again with a damp cloth and let it rise for another 30 minutes.
  7. Preheat the oven to 375°F (190°C).
  8. Bake the bread for 35-40 minutes, until it is golden brown and sounds hollow when tapped on the bottom.
  9. Let the bread cool on a wire rack before slicing and serving.
