- 1/2 tsp baking soda
- 1 Tbsp salt
- 1/4 cup water
- 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1 qt vegetable oil, for frying
Instructions
- In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne pepper, baking soda, and salt. Pulse until mixture is coarse but not pureed.
- Transfer the mixture to a bowl and stir in water, flour, and baking powder. Cover the bowl and refrigerate for at least 1 hour to let the flavors meld and the mixture firm up.
- Heat the vegetable oil in a deep pan to 350°F (180°C).
- Shape the chickpea mixture into small balls, roughly the size of a walnut.
- Carefully place the balls into the hot oil in batches, avoiding overcrowding, and fry until golden brown and crispy, about 3-4 minutes per batch.
