Instructions

  2. Place each roasted eggplant on a flat surface and gently flatten using a fork.
  3. In a small bowl, mix the diced onion, tomato, and ground pork until well combined.
  4. Spread the onion, tomato, and pork mixture over the flattened eggplant evenly.
  5. Pour a portion of the beaten egg mixture over the eggplant and filling.
  6. Fold the eggplant over the filling to form an omelet, pressing gently to keep the layers together.
  7. In a separate bowl, whisk together flour and water until smooth to create a batter.
  8. Dip each eggplant omelet in the batter, ensuring it is fully coated on both sides.
  9. In a pan, heat the cooking oil over medium heat.
  10. Carefully add the battered omelet to the pan and fry until golden brown on one side, about 3-4 minutes.
  11. Using a spatula, gently flip the omelet and cook the other side until golden brown and cooked through, about another 3-4 minutes.
  12. Remove from pan and drain excess oil on paper towels before serving.
