Ingredients

  • 4 whole pav buns
  • 4 whole potatoes, boiled and mashed
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 2 tsp green chili, finely chopped
  • 1 tsp ginger, grated
  • 2 tsp garlic, minced
  • 1 tsp coriander leaves, chopped
  • 1 tsp lemon juice
  • 1 tsp salt
  • 1 cup besan (gram flour)
  • 1 tsp red chili powder
  • 1/2 tsp baking soda
  • 1 tbsp oil
  • as needed whole oil for frying
  • as needed whole green chutney
  • as needed whole tamarind-date chutney

Instructions

  1. In a pan, heat 1 tbsp of oil over medium heat and add mustard seeds. Once they splutter, add 1 tsp turmeric powder, green chili, ginger, and garlic. Saute for 1 minute.
  2. Add mashed potatoes, 1 tsp salt, coriander leaves, and lemon juice. Mix well and cook for 2-3 minutes. Allow the mixture to cool.
  3. Shape the potato mixture into balls and set aside.
  4. In a bowl, mix besan, red chili powder, 1 tsp turmeric powder, baking soda, and a pinch of salt with water to make a thick batter.
  5. Dip each potato ball in the batter, ensuring it’s coated well.
  6. Heat oil in a pan over medium heat and deep fry the coated potato balls until golden brown and crispy, about 4-5 minutes each, then drain on paper towels.
  7. Slice pav buns horizontally without cutting them all the way through.
  8. Spread green chutney on one side and tamarind-date chutney on the other inside of the pav.
  9. Place a vada (potato ball) in the center of the pav and press gently to assemble the Vada Pav.
  10. Serve with additional chutney on the side if desired.
