Ingredients
- 4 whole pav buns
- 4 whole potatoes, boiled and mashed
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 2 tsp green chili, finely chopped
- 1 tsp ginger, grated
- 2 tsp garlic, minced
- 1 tsp coriander leaves, chopped
- 1 tsp lemon juice
- 1 tsp salt
- 1 cup besan (gram flour)
- 1 tsp red chili powder
- 1/2 tsp baking soda
- 1 tbsp oil
- as needed whole oil for frying
- as needed whole green chutney
- as needed whole tamarind-date chutney
Instructions
- In a pan, heat 1 tbsp of oil over medium heat and add mustard seeds. Once they splutter, add 1 tsp turmeric powder, green chili, ginger, and garlic. Saute for 1 minute.
- Add mashed potatoes, 1 tsp salt, coriander leaves, and lemon juice. Mix well and cook for 2-3 minutes. Allow the mixture to cool.
- Shape the potato mixture into balls and set aside.
- In a bowl, mix besan, red chili powder, 1 tsp turmeric powder, baking soda, and a pinch of salt with water to make a thick batter.
- Dip each potato ball in the batter, ensuring it’s coated well.
- Heat oil in a pan over medium heat and deep fry the coated potato balls until golden brown and crispy, about 4-5 minutes each, then drain on paper towels.
- Slice pav buns horizontally without cutting them all the way through.
- Spread green chutney on one side and tamarind-date chutney on the other inside of the pav.
- Place a vada (potato ball) in the center of the pav and press gently to assemble the Vada Pav.
- Serve with additional chutney on the side if desired.
