Ingredients
- 1 cup orzo
- 1/2 cup kalamata olives, chopped
- 2 Tbsp fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 2 Tbsp olive oil
Instructions
- Heat 2 Tbsp of olive oil in a large skillet over medium heat.
- Add 2 cloves of minced garlic and cook until fragrant, about 1 minute.
- Stir in 1 cup of orzo and toast until golden brown, about 3 minutes.
- Add 3 cups of vegetable broth, 1/2 cup of chopped kalamata olives, 2 Tbsp of chopped fresh parsley, and 1/4 cup of chopped fresh dill to the skillet. Stir well.
- Bring the mixture to a simmer, then cover the skillet. Cook for 10-12 minutes, or until the orzo is tender and has absorbed most of the broth.
- Taste and adjust seasoning with salt and pepper as needed.
