Ingredients

  • 1 whole english cucumber
  • 1 container cherry tomatoes
  • 1 block feta cheese
  • 1/2 cup kalamata olives
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh parsley leaves
  • 1/4 cup extra virgin olive oil
  • 1 tsp dried oregano

Instructions

  1. Wash the cucumber and cherry tomatoes.
  2. Cut the cucumber into thick slices, halve the cherry tomatoes, and cube the feta cheese.
  3. Thread a cucumber slice, cherry tomato, olive, feta cheese cube, mint leaf, and parsley leaf onto each skewer.
  4. Arrange the skewers on a serving platter.
  5. In a small bowl, whisk together the olive oil and oregano.
  6. Drizzle the dressing over the skewers just before serving.
