- 1 1/2 cup heavy cream
- 1 1/2 cup whole milk

- 1 packet gelatin
- 6 oz white chocolate, finely chopped
- 1/2 tsp dried lavender buds

- In a saucepan, combine the heavy cream, whole milk, sugar, and vanilla bean. Heat over medium heat, stirring occasionally, until the sugar has dissolved completely.
- Remove the saucepan from the heat and add the gelatin. Whisk until the gelatin is fully dissolved and the mixture is smooth.
- Strain the mixture through a fine mesh sieve to remove any solids, then return the strained mixture to the saucepan.
- Add the finely chopped white chocolate and dried lavender buds to the saucepan, stirring continuously until the chocolate is melted and the mixture is smooth.
- Pour the mixture into individual ramekins or molds. Refrigerate until the panna cotta is fully set, approximately 4 hours.
- To serve, gently dip the molds in hot water for a few seconds to loosen the panna cotta, then invert each onto a serving plate.
- Garnish each panna cotta with fresh lavender sprigs and white chocolate shavings.
