  • 1 cup canned diced green chilies
  • 16 oz monterey jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 cup milk
  • 1/4 cup cilantro, chopped, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat vegetable oil in a skillet over medium heat and cook the chorizo until browned, breaking it into crumbles. Once cooked, transfer the chorizo to a plate.
  3. Using the same skillet, sauté the chopped onion until soft and translucent, about 2-3 minutes. Add the minced garlic and cook for an additional minute.
  4. Add the diced tomatoes and green chilies to the skillet and stir well. Cook this mixture for about 2 minutes to blend the flavors.
  5. Return the cooked chorizo to the skillet. Mix in both types of cheese, cilantro, ground cumin, chili powder, and milk until combined.
  6. Transfer the cheese and chorizo mixture into a baking dish and bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and lightly browned on top.
  7. Remove from oven and sprinkle with chopped cilantro and sliced green onions. Serve warm with tortilla chips.
