Ingredients
- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1/4 cup honey
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8" x 8" baking pan with parchment paper.
- In a large bowl, combine mashed bananas, rolled oats, honey, almond milk, vanilla extract, cinnamon, and salt. Mix until well combined.
- Fold in the optional chopped nuts into the mixture.
- Pour the banana oatmeal mixture into the prepared baking pan, spreading it out evenly.
- Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
- Allow the bars to cool completely in the pan before slicing into 8 bars.
- Store in an airtight container for up to 5 days or freeze for longer storage.
