Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1/4 cup honey
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8" x 8" baking pan with parchment paper.
  2. In a large bowl, combine mashed bananas, rolled oats, honey, almond milk, vanilla extract, cinnamon, and salt. Mix until well combined.
  3. Fold in the optional chopped nuts into the mixture.
  4. Pour the banana oatmeal mixture into the prepared baking pan, spreading it out evenly.
  5. Bake for 25-30 minutes, or until the edges are golden brown and the center is set.
  6. Allow the bars to cool completely in the pan before slicing into 8 bars.
  7. Store in an airtight container for up to 5 days or freeze for longer storage.
