Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder

- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup buttermilk
- 1 pound sage-infused sausage
- 1/4 cup all-purpose flour
- 2 cups whole milk

- 1 tablespoon fresh sage, chopped
Instructions
- Preheat oven to 425°F (220°C).
- In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, and 1/2 teaspoon salt.
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add the buttermilk, stirring until just combined. Do not over mix.
- Turn the dough onto a floured surface and knead gently, then roll it out to about 1/2-inch thick.
- Cut biscuits using a round cutter and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes until golden brown. Remove from oven and let cool slightly.
- In a large skillet over medium heat, cook the sage-infused sausage until browned, about 5-7 minutes.
- Sprinkle 1/4 cup of flour over the sausage and stir for 1 minute.
- Gradually whisk in the milk, stirring constantly until thickened, around 5-7 minutes.
- Season the gravy with salt and black pepper to taste, and add chopped sage.
- Serve warm biscuits topped with the sage sausage gravy.
