Black Bean and Quinoa Stuffed Bell Peppers with Lime Crema

Ingredients

  • 4 large bell peppers, halved and seeds removed
  • 1 cup quinoa, cooked
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 cup fresh cilantro, chopped
  • 1 large lime, juiced and zested
  • 1/2 cup Greek yogurt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cooked quinoa, black beans, corn, cumin, paprika, chili powder, cilantro, and a pinch of salt and pepper.
  3. Spoon the quinoa mixture into each bell pepper half and place them in a baking dish.
  4. Cover the dish with foil and bake for 25 minutes.
  5. While the peppers are baking, mix Greek yogurt with lime juice and zest in a small bowl.
  6. Remove peppers from the oven, uncover, and bake for an additional 5 minutes until peppers are tender.
  7. Serve the stuffed peppers drizzled with lime crema.
