Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 32 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 3 tbsp bourbon
  • 3 large eggs
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup of sugar. Press the mixture firmly into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, 1 cup of granulated sugar, flour, and vanilla extract until the mixture is smooth. Add the bourbon and mix until well combined.
  4. Add the eggs one at a time, beating well after each addition, until fully incorporated into the mixture. Gently fold in the chopped pecans.
  5. Pour the cheesecake batter over the prepared crust and smooth the top with a spatula. Bake in the preheated oven for 55 to 60 minutes, or until the center is almost set.
  6. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually. Remove the cheesecake from the oven and cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
  7. Serve the cheesecake chilled.
